What is Balsamic Vinegar?

In the last decade, balsamic vinegar has increased in demand. Chefs love to use it in their culinary creations.  It can be found in gourmet markets, specialty food shops, grocery stores and restaurants. What is it and why has it become so popular? 

Let’s start with a little bit of history….

    Balsamic vinegar originated in Modena, Italy. It has been around for close to a thousand years. Modena is a wine-producing region and specializes in trebbiano (white grapes) and lambrusco (red grapes) varietals. Balsamic vinegar is not made from wine but it is made from the juice of unfiltered, crushed grapes. This is known as “must”.

    The must is boiled down and reduced to a darkened syrup that is aged in wooden barrels. In the barrels it goes through fermentation, creating alcohol. The acetic bacteria turn the wine into vinegar. It is a very lengthy aging process of about 10 years or more.

    The liquid in the barrels evaporate and is transferred to barrels of various woods (such as oak, cherry or juniper). It takes on the characteristics of the natural elements of the wood as it mellows. After that, it is often aged more before bottling. The color is deep, rich brown and its aroma is pleasantly intense. It has a sweetness on the palate that is balanced by acidity.

What are some of the uses for Balsamic Vinegar?

     The most common use is on salads. But, it can be used for so much more! A little does goes a long way. It pairs well with cheeses, meats, fruits and desserts. It is highly versatile and the combinations are endless. It is very simple to use and is also is excellent on top of ice cream!

     There are several health benefits ranging from possibly lowering cholesterol to improving skin health. Research has shown that it may even aid in weight loss. It can help to promote healthy digestion. The acetic acid contains strains of probiotics. And, may even help to regulate blood sugar. It is also vegan and gluten free!
